Almond Butter Bun

Dalam sibuk dok main snow, sempat gak aku buat roti. Almond butter bun, resepi dari Chef Steven Goh yang aku dapat masa gi belajar Modern Bread Baking Class Workshop di Bagus Baking Centre dulu.. Kita layan resepi roti jap sebelum sambung dengan gambar2 main snow..




ALMOND BUTTER BUN

400 gm bread flour
100 gm plain flour
(aku guna 500 gm tepung gandum)
20 gm sugar
a pinch of salt
1 packet instant yeast
2 nos eggs
100 ml condence milk
60 gm butter
1 tea spoon bread softener
190 ml water

Almond filling:
200 gm ground almond
100 gm icing sugar
100 gm plain flour
200 gm butter
3 nos eggs

Cara-cara:
1. Combine flour, sugar, salt, yeast, eggs, condence milk and water in a bowl. Stir around 2-3 minutes.
2. Put in butter and softener and mix around 8-10 minutes.
3. Rest until double in size (aku letak dalam oven dengan temp paling rendah)
4. Divide into each dough 50-60 grams, roll into round shape.
5. Put in the almond filling dan fold into two (macam bentuk karipap).
6. Proof again until double in size.
7. Brush on top of dough with fresh milk and sprinkle with some sesame seed.
8. Bake with temp 190C for 10-15 minutes.

Almond Filling
1. Putar mentega. Masukkan gula aising dan putar hingga kembang.
2. Masukkan telur dan putar hingga sebati.
3. Masukkan tepung dan serbuk badam. Putar sebentar.
